Rosemary Garlic Loin Chops

Ingredients:

  • 4 lamb loin chops

  • 3 cloves garlic, minced

  • 2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)

  • 1 teaspoon sea salt

  • 1/2 teaspoon freshly ground black pepper

  • 1/4 cup olive oil

  • 1 tablespoon balsamic vinegar

  • Lemon wedges, for serving

Instructions:

  1. Prepare the Marinade: In a small bowl, mix the minced garlic, chopped rosemary, sea salt, black pepper, olive oil, and balsamic vinegar until well combined.

  2. Marinate the Lamb: Place the lamb loin chops in a shallow dish or resealable plastic bag. Pour the marinade over the chops, ensuring they are well coated. Cover the dish or seal the bag and refrigerate for at least 1 hour, preferably 4 hours, to allow the flavors to infuse.

  3. Preheat the Grill or Oven: If grilling, preheat your grill to medium-high heat. If using an oven, preheat it to 400°F (200°C).

  4. Cook the Lamb:

    • Grilling: Remove the lamb from the marinade, allowing excess to drip off. Place the loin chops directly on the grill. Cook for about 4-5 minutes per side for medium-rare, or until the desired doneness is reached.

    • Oven: In an oven-safe skillet, heat a drizzle of olive oil over medium-high heat. Sear the loin chops for 2-3 minutes on each side until browned. Transfer the skillet to the preheated oven and roast for an additional 8-10 minutes for medium-rare.

  5. Rest the Lamb: Once cooked, remove the lamb loin chops from the heat and allow them to rest for about 5 minutes. This will help the juices redistribute for a more tender bite.

  6. Serve: Plate the loin chops and garnish with lemon wedges for a bright finish. Pair with your favorite sides, such as roasted vegetables or a fresh salad, to complete the meal.
