Grilled Lamb Chops with Herb Marinade
Ingredients:
8 lamb chops (approximately 1 inch thick)
1/4 cup extra virgin olive oil
3 cloves garlic, minced
2 tablespoons fresh rosemary, finely chopped
2 tablespoons fresh thyme, finely chopped
1 tablespoon Dijon mustard
Juice of 1 lemon
Salt and freshly ground black pepper, to taste
Instructions:
Prepare the Marinade: In a medium bowl, whisk together the olive oil, minced garlic, rosemary, thyme, Dijon mustard, lemon juice, salt, and pepper.
Marinate the Lamb Chops: Place the lamb chops in a shallow dish or a resealable plastic bag. Pour the marinade over the lamb, ensuring each chop is well-coated. Cover or seal and refrigerate for at least 2 hours, preferably overnight for enhanced flavor.
Preheat the Grill: Preheat your grill to medium-high heat. If using charcoal, let the coals burn until covered with ash.
Grill the Lamb Chops: Remove the lamb chops from the marinade and let excess marinade drip off. Discard the leftover marinade. Place the chops on the grill, cooking for about 4-5 minutes on one side.
Flip and Cook: Turn the lamb chops over and continue cooking for an additional 4-5 minutes for medium-rare, or adjust the time based on your preferred doneness.
Rest the Chops: Remove the lamb chops from the grill and let them rest for 5 minutes. This allows the juices to redistribute, ensuring tender meat.
