Farm Breakfast Lamb Sausage

Savory, slightly sweet, and warmly seasoned, this homemade breakfast sausage is an easy way to turn one pound of ground lamb into patties or loose breakfast sausage. It is especially good served with biscuits and eggs or added to a breakfast casserole.

Ingredients

  • 1 pound ground lamb

  • 2 teaspoons packed brown sugar

  • 1 teaspoon onion powder

  • 1 teaspoon fine salt

  • 3/4 teaspoon rubbed sage

  • 3/4 teaspoon ground black pepper

  • 1/4 teaspoon ground ginger

  • 1/4 teaspoon red pepper flakes

  • 1/8 teaspoon garlic powder

Instructions

  1. Combine the brown sugar, onion powder, salt, sage, black pepper, ginger, red pepper flakes, and garlic powder in a small bowl.

  2. Sprinkle the seasoning mixture evenly over the ground lamb.

  3. Mix gently until the seasonings are evenly incorporated. Avoid overworking the meat.

  4. Cover and refrigerate for at least 30 minutes to allow the flavors to develop. For the best flavor, refrigerate overnight.

  5. Shape into approximately eight small patties, or leave the sausage loose for crumbling.

  6. Cook in a skillet over medium heat until browned and the center reaches 160°F, turning patties as needed.
