Farm Breakfast Lamb Sausage

Savory, slightly sweet, and warmly seasoned, this homemade breakfast sausage is an easy way to turn one pound of ground lamb into breakfast patties or loose sausage. It is especially good served with biscuits and eggs or added to a breakfast casserole.

Ingredients

  • 1 pound ground lamb

  • 2 teaspoons packed brown sugar

  • 1 teaspoon onion powder

  • 1 teaspoon fine salt

  • 3/4 teaspoon rubbed sage

  • 3/4 teaspoon ground black pepper

  • 1/2 teaspoon dried parsley

  • 1/4 teaspoon dried thyme

  • 1/4 teaspoon dried basil

  • 1/4 teaspoon ground ginger

  • 1/4 teaspoon red pepper flakes

  • 1/8 teaspoon garlic powder

Instructions

  1. Combine the brown sugar, onion powder, salt, sage, black pepper, parsley, thyme, basil, ginger, red pepper flakes, and garlic powder in a small bowl.

  2. Sprinkle the seasoning mixture evenly over the ground lamb.

  3. Mix gently with your hands until the seasonings are evenly incorporated. Avoid overworking the meat.

  4. Cover and refrigerate for at least 30 minutes to allow the flavors to develop. For the best flavor, refrigerate overnight.

  5. Shape the sausage into approximately eight small patties. You can also leave it loose for crumbling into biscuits, eggs, gravy, or casseroles.

  6. Cook in a skillet over medium heat for approximately 4–5 minutes per side, or until browned and completely cooked through.
